Beef jerky has a long shelf life and can be safely stored at room temperature for months on end. The key reason behind this is the dehydration process used to make beef jerky. When moisture is removed from the meat, it creates an inhospitable environment for bacteria to grow. Bacteria need moisture to thrive and reproduce, so without it, they are unable to survive on the dried beef.

Additionally, many commercial brands of beef jerky also add preservatives and spices during the production process that further inhibit bacterial growth.
