Eggplant

Eggplants have a delicate nature and storing them in cold temperatures can actually compromise their taste and texture. When exposed to the low temperatures of a refrigerator, eggplants tend to develop a bitter flavor and turn mushy, losing their desirable firmness.
One reason behind this phenomenon is that eggplants are sensitive to chilling injuries. These injuries occur when the fruit’s cells are damaged by low temperatures, leading to discoloration and an unpleasant taste. Additionally, the moisture inside a fridge can cause the surface of the eggplant to become rubbery or wrinkled, further impacting its quality.
