Although it may seem like a perfect candidate for chilling due to its juicy nature, refrigerating a tomato actually alters its flavor and texture. Refrigeration causes the cells in the flesh of tomatoes to break down more rapidly, resulting in a mealy and mushy texture that is far from appetizing.
Plus, cold temperatures hinder the ripening process of tomatoes. When kept at low temperatures, enzymes responsible for ripening become less active, causing the fruit to lose its natural sweetness. Instead of becoming flavorful and juicy as intended, chilled tomatoes tend to remain underdeveloped and tasteless.
