One of the biggest mistakes people make when it comes to storing ginger is keeping it in the fridge. While the cool temperature may seem ideal for preserving freshness, refrigeration can actually make ginger lose its flavor and aroma much faster. Ginger has a high water content, and when exposed to cold temperatures, this moisture can cause the ginger to become soft and moldy.
Instead of hiding your ginger in the fridge, try storing it at room temperature instead. A cool pantry or kitchen cabinet will do just fine.
